Summer Squash & Arugula Salad / Ensalada de Calabaza de Verano




This delicious, healthy and light Summer Squash & Arugula Salad is a recipe of Superstar Chef Jean-Georges that I prepared for the Contest Superstar Chefs Farm-To-Table Challenged TV program  Live’s Kelly & Michael.  I didn't know until my friend Susan mentioned to me and send me all the info… I am very competitive and because my passion for cooking I am always looking for cooking contest…Cooking contest are so much food and why not  to give a try when you are an amazing cook by heart-still if you do not get in is a great satisfaction and you will improving more and more and maybe that day to be in one will come!!!



 Kelly & Michael: Jean-Georges Summer Squash Salad Recipe


Ingredients

Preparation
1 cup Wild Arugula
½ cup Avocado
8 Ball & Goldbar Squashes
20 pieces Aged Sheep  Milk Cheese
Black Pepper (as needed)
3 Tbsp Parmesan cheese 

Prepared a dressing and set on the side. Mix   in a small bowl 2 tablespoons of lemon juice, 2 tablespoons olive oil and salt and pepper.
Slice zucchini and squash.
Make avocados ball with a melon baller .
Put the squash, zucchini, avocado balls and arugula in a plate.
Add the dressing and Parmesan cheese on the salad.



 Kelly & Michael: Jean-Georges Receta Ensalada de Calabaza de Verano  


Ingredients
Preparation
1 taza de rúcula
½ taza de aguacate
8 bolitas de calabazas
20 piezas de queso de cabra
Salt y Pimienta Negra(según sea necesaria )
3 cucharadas de Queso parmesano


Prepared a dressing and set on the side. Mix   in a small bowl 2 tablespoons of lemon juice, 2 tablespoons olive oil and salt and pepper.
Slice zucchini and squash.
Make avocados ball with a melon baller .
Put the squash, zucchini, avocado balls and arugula in a plate.
Add the dressing and Parmesan on the salad.

Prepare el aderezo y reservelo.
Mezcle en un tazón pequeño 2 cucharadas de jugo de limón, 2 cucharadas de aceite de oliva , sal y pimienta Rebane el zuchini y la calabaza.
Haga unas bolitas de aguacate con un cortado de bolitas.
En un plato coloque el calabacín , la calabaza, las bolitas de aguacate y la rúcula en un plato.
Agregue el aderezo y queso parmesano en la ensalada.
