Buen Provecho… from my Kitchen to you Kitchen !!!
This recipe is really succulent and a great combination of flavors and you kitchen will smell wonderful. You will love this dish specially created for Round 2 Food Network Chopped at Home contest sponsored by Sargento I hope you like it and will be a great complement if you make it a home!!!
Succulent Boneless Chicken tenders with Cumin, Turkish Aleppo Pepper and Thyme on a bed of Cumin Mint Couscous topped with a fresh, flavorful & colorful homemade Salsa; made with tomatoes, Red Onion, Red pepper, Cucumber, Mango, Corn, Cilantro, Lime Juice and a kick of hot Peruvian Yellow Pepper. On the side there are Sargento Cheese Corn Crisps that melt in your mouth, and Avocado slices with Pomegranate seeds that add a special touch. This recipe has been created in in a mini stove kitchen of the hotel where I am currently living until I moved to my house in a few months!!! for a coming contest for Food Network Chopped at Home contest Round 2
Main Ingredients for Round Two Basket :
Sargento® Off the Block Shredded 4 Cheese Mexican
Boneless chicken tenders,
Couscous,
Salsa
Boneless Chicken tenders with Cumin, Turkish Aleppo Pepper and Thyme
Ingredients | Preparation |
1 pound of chicken tenders ½ teaspoon ground cumin 2 tbspTurkish Aleppo pepper 1 tbsp thyme Salt to taste 4 large cloves of garlic minced. |
Cut the chicken tenders in half and seasoned with cumin, Aleppo pepper, thyme, garlic (reserve 1 garlic clove for sauté the chicken) and salt. Let it rest in a covered bowl for 15 minutes at least before cooked and will have a great and delicious flavor. Heat a medium nonstick skillet and put 2 tbsp of olive oil and 1 garlic clove sliced. Sauté the chicken tender for about 5 minutes each side until golden. The smell in your kitchen will be very amazing!!!

Cumin Mint Couscous
Ingredients | Preparation |
1 cup dry couscous 2 ¼ cups boiling water ½ teaspoon ground cumin 2 tablespoons mint (If you have fresh you can use fresh instead) 1 teaspoon salt 3 tablespoons extra virgin olive oil | In a medium size bowl combine the boiling water, cumin mint, olive oil and salt. Add the dry couscous mixing with a fork. Cover and let stand for 10 minutes and them fluff with a fork. Let it cover until is ready to be served. |
Sargento Cheese Corn Crisps
Ingredients | Preparation |
1/2 cups corn flour (precooked cornmeal Harina Pan or Masarepa). 1/2 cups + 3 tbsp room temperature water ½ cup Sargento® Off the Block Shredded 4 Cheese Mexican + extra for topping 1/2 teaspoon salt 1 tablespoons vegetable oil | In a in a medium bowl add the water. Using a fork gradually incorporate precooked cornmeal, salt, oil and cheese stirring until no dry lumps remain and it look like playdough. Finish kneading with your hands. Let rest 10 minutes. If is to dry add a little more of water and knead again. Make small ball pieces (about the size of a ping pong ball) and flatten them with the palms of your hand until very thick. Heat a medium nonstick skillet and spread 1 tbsp of oil with a napkin. Put the flatted corn cheese balls in the skillet. Cook for about 2 minutes each side and cook until golden brown. When you turn to the other side add some extra cheese in the top. The cheese will melt beautiful!!! Cut in little strip to serve as garnish with your couscous. They are perfect cheese and crispy...!! |
Homemade Salsa with tomatoes, Red Onion, Red pepper, Cucumber, Mango, Corn, Cilantro, Lime Juice and a kick of hot Peruvian Yellow Pepper.
Ingredients | Preparation |
3 tomatoes, fine dice
1 red onion, fine chopped
1 red bell pepper, fine dice
1/2 stalk of celery, fine chopped
1/2 cucumber, fine chopped
¾ cup mango, fine chopped
½ cup corn
½ cup fresh cilantro
Lime Juice of 3 limes
1 tablespoon Peruvian Yellow Pepper (You can add more I you want it more hot)
1 tbsp grated fresh ginger
1 tablespoon vegetable oil
Salt and pepper to taste
| Mix all ingredients in a bowl. Is fresh, colorful and very very flavorful and a perfect kick of hot with the Peruvian Yellow pepper (Aji Amarillo)!!! |
Plating the Final Dish
To assembly you dish place a square mold (You can use any shape that you like it) in a plate and fill with about 5 tbsp of couscous. Add some pressure before removed the mold. Place 3 tablespoon of the homemade salsa n top of the couscous and put 3 think small avocados slides on top.
On the side place the corn cheese strips and the chicken. Add some Pomegranate seeds that add a special touch and sprinkle some extra Sargento® Off the Block Shredded 4 Cheese Mexican ... It the perfect dish for your family... Buen Provecho !!!!

Tiritas de pollo con Couscous de menta y comino, Salsa Fresca y Tostaditas de queso y maiz
Buen Provecho ... desde mi cocina para la tuya!!!
Suculentas tiritas de pollo deshuesadas con comino, pimienta turca Alepo y tomillo. Deliciosa salsa fresca colorida elaborada con tomates, cebolla roja, pimiento rojo, pepino, mango, maiz, cilantro, jugo de limón y aji amarillo Peruano sobre camada de Couscous con menta y comino.Para contorno tiritas de maiz y queso asadas que se derriten en la boca, trozos de aguacate y semillas de granadilla para darle un toque especial. Esta receta la he elaborado en una mini cocina del hotel del hotel donde estoy viviendo hasta que me mude a una casa en varios meses para el concurso de cocina Chopped at Home Ronda 2 de Food network.
Esta receta es muy sculenta y una gran combinacion de sabores y aromas que haran que su cocina huela maravillosamente. EStoy segura que les encantara mi receta preparada para Food Network Ronda 2 Chopped at Home. Mi mayor complemeto es si tu te animas a prepara mi receta!!!!
Ingredientes de la cesta de la Segunda Ronda:
Queso Sargento 4 queso mexicano,
Tiritas de pollo deshuesadas
Couscous
Salsa
Suculentas tiritas de pollo deshuesadas con comino, pimienta turca Alepo y tomillo.
Couscous de Menta y Comino
Tostaditas de Maiz y queso Sargento
Salsa elaborada con tomates, cebolla roja, pimiento rojo, pepino, mango, maiz, cilantro, jugo de limón y aji amarillo Peruano .
Armado del Plato
Sobre un plato coloque un molde abierto rectangular (puede usar otra forma si gusta). Llenelo con aproximadamente 5 cucharadas de couscous. Presione un poco con una cucharilla, retire el molde cuidadosamenet y coloquele encima 3 cucharadas de Salsa , y encima 3 rebanadas delgadas de aguacate.A un lado coloque las tostaditas de maiz y queso y el pollo.Decore el plato con un poco de semillas de granadilla para darle un toque especial y colorido y pongale un poco mas de queso Sargento 4 quesos mexicano encima de las tostaditas. Es el plato perfecto para su familia.
