Patlıcan Güveç - Eggplant Stew - Cacerola de Berenjenas (Turkey)



Recipe   Eggplant Stew

Ingredients
1 Eggplant cut into long strips, small
4 Tomatoes Sliced
6 cloves of Garlic Sliced
1 Onion Sliced
4 Zucchini or White squash Sliced
2 potatoes Sliced
1 green pepper sliced or 2 Anaheim peppers. (You are lucky if you find Green Turkish peppers)
2 tablespoons olive oil
4 tablespoons Tomato Paste
2-3 tablespoons Biber Salsa Aci (Turkish Hot Red Pepper Sauce)
¼ teaspoon of cumin (optional –I particularly like the flavor when you add a pinch of cumin)
1.5 Cup of water
Salt and Black Pepper to Taste
Fresh Parsley  


Preparation
 Heat the oven to 375 F.
Coat a deep clay pot with olive oil
Heat a large skillet over medium-high heat. Add the olive oil. Sautee the onion for 3 to 5minutes
Grated 1 tomato.
 In a small bowl, mix together water, the grated tomato, tomato paste, pepper paste, cumin, salt and pepper. Set side.
Arrange a single layer of potato slices in the clay pot.
Top the potatoes with half of the onions.
Top the onions with a single layer of green peppers
Top the green peppers with a single layer of tomatoes.
Top the tomatoes with a single layer of eggplant.
Repeat the layering.
Pu the garlic in the center and around the layered vegetables
Pour the sauce on the top of the layered vegetables.
Cover with aluminum foil (make a few small hole to the foil) and bake for 30
Uncover and bake for another 30-45 minutes,.
Remove from the oven and garnish with some fresh parsley.

You can eat the dish with some plain white rice or   Turkish flat bread, Indian Nan or Pita Bread .

Is an extraordinary, healthy and flavorful dish!!!
Notes:

Pepper Paste:
If you do not have Turkish Pepper Paste you can make your own roasting 2- 3 red chili peppers, 3 red peppers  and if you want to very hot also add 1 or 2 roasted habanero pepper and blend all togheter with a pinch of salt and 3 tbsp of lemon juice and 2 tbs olive oil.

Some cooking Tips with Clay Pots:
I do a lot of cooking in clay pot and I have learn that in better to soak a clay pot (special when is no coated or glazed) in water for about 15 minutes to half hour before to place inside the ingredients. Your final dish will be more moisture.

Also is very important that when you put the dish in the oven because is clay put it when is cold and turn on the oven ones the pot is inside the oven because drastic changes of temperature can make the clay pot crack





Receta Cacerola de Berenjenas

Ingredientes
1 berenjena cortada en tiras largas, pequeñas
4 tomates en rodajas
6 dientes de ajo en rodajas
1 cebolla en rodajas
4 calabacines o calabaza blanca en rodajas
2 papas (patatas) en rodajas
1 pimiento verde en rodajas o 2 pimientos Anaheim. (Tienes suerte si encuentras pimientos verdes turcos)
2 cucharadas de aceite de oliva
4 cucharadas de pasta de tomate
2-3 cucharadas de Biber Salsa Aci (Salsa de Pimenton Roja Turca )
¼ cucharadita de comino (opcional-en particular me gusta el sabor cuando se agrega una pizca de comino)
1.5 Taza de agua
Sal y pimienta al gusto
Perejil fresco


Preparacion
 Calentar el horno a 375 F.
Barnize una olla de barro  con aceite de oliva
Caliente una sartén grande a fuego medio-alto. Añadir el aceite de oliva. Caliente la cebolla durante 3 a 5 minutos
Raye  1 tomate.
  En un tazón pequeño, mezcle el agua, el tomate rallado, pasta de tomate, pasta de pimenton, comino, sal y pimienta. Reservelo
Colocar los vegetales en capas en el siguiente orden en una cazuela de barro o en un pirex.
Coloque una primera capa de papas.
Agregue la mitad de las cebollas sobre la capa de papas.
Sobre las papas coloque una capa de pimientos verdes.
Sobre los pimientos verdes coloque una capa de tomates.
Encima de los tomates agrega una capa de berenjenas
Repita las capas nuevamente
Agregele las rebanadas de ajo insertándolas en el centro y a los lados.
Vierta la salsa por encima.
Cúbra la  cazuela con papel de aluminio (hágale  unos pequeños hoyos en el papel de aluminio) y hornéela por 30 minutos.
Retire el papel de aluminio y hornee durante otros 30-45 minutos.
Retire  del horno y decore con un poco de perejil fresco.

Muy importante para los latinos que tanto nos gusta el cilantro. No le coloque cilantro porque está preparando un plato turco y el perejil es lo que se utiliza en la comida turca- sin perejil no hay comida Turca!! El sabor del plato cambiaria.

Usted puede acompañarlo con  poco de arroz blanco o pan  turco,  Nan o Pita

Es un plato extraordinario, sano y sabroso!

Notas
Pasta de Pimentón:
Si usted no tiene la pasta de pimentón Turca puedes preparar una pasta asando 2-3 pimienta turca Pegar usted puede hacer su propia torrefacción 2-3 chiles rojos y si quieres  bien picante agrégale   1 o 2 asada habanero y prepara  la pasta colocándola en un procesador de alimento con unas 2 cucharadas de aceite de oliva.

Algunos consejos para cocinar con ollas de barro: 
Preparo muchas recetas en cazuelas de barro y cuando la cazuela no tiene la capa glaseada es mejor que la cazuela se remoje en agua durante unos 15 minutos a media hora antes de colocar adentro de los ingredientes. Su plato final será más humedo 

También es muy importante que cuando ponga la cazuela de barro en el horno lo haga con el horno frio ya que los cambios drásticos de temperatura pueden hacer que se agriete la olla de barro
