I learned the recipe from my German neighbor Gaby. She was very nice. I called “Käsekuchen Gaby" my German cheesecake in memory of her. I did not spook German she did not spook English but I learned the name in German ingredients. I went to Lidl to buy the ingredients and as Gaby was making the Käsekuchen teaching me I was writing the recipe!!!
Esta receta me la enseño mi vecina Alemana Gaby, por lo que lo llamo Käsekuchen Gaby" mi pastel de queso alemán en memoria de ella. Yo no hablaba Aleman y Gaby no hablaba Ingles, pero me sabia los nombres de los ingredientes en Alemán, así que fui Lidl a comprar los ingredientes y a medida que Gaby me enseñaba como se preparaba el Käsekuchen yo estaba escribiendo la receta!
Ingredients For the crust 150 g all-purpose flour 1 tablespoon Baking Powder “Back Pulver” 50 g Sugar 1 envelope of vanilla sugar “ Vanillin Zucker” (or 1 tablespoon vanilla extract) 1 pinch of salt 1 egg beaten at room temperature 75g unsalted butter at room temperature 1 tablespoon lemon zest For the mold butter Cornmeal For the filling 5 egg yolks room temperature 5 egg whites room temperature 75 g unsalted butter room temperature 150 grams of sugar 1 sachet of vanilla sugar (or 1 tablespoon vanilla extract) 125 grams of whipping cream 1 Envelope of Vanilla Pudin “Pulver-Geschman Vainille” 125 g Heavy Whipped Cream 3 drops of lemon extract 1 tbsp Lemon zest 750 gr Magerquark (fat-free Quark - German cheese) Quark substitute 500g Greek yogurt 250 grams of sour cream | Preparation Crust Mix flour, baking powder, vanilla and salt. Add butter, egg and lemon zest Mix into a dough. Wrap in plastic wrap and refrigerate for half an hour. Preheat oven to 350F (180C) Varnish with butter and corn flour a round pan with removable base (removable). IF no one can use any mold but put parchment pepper on the bottom and sides. (Instead of flour you brush the mold with butter and put a little of corn meal. That is what give the particular texture to the German cheesecake). Remove dough from refrigerator and place in the center of the mold. Press y extend the dough pressing with your fingers to cover the bottom and sides. Another option would be to roll the dough with a rolling pin and place it in the mold but the traditional way as they do in Germany is doing it with your fingers in the same mold. Bake for 15 minutes at 350 oF (180 oC) Let it cool down and prepare the filling.
Filling:
In a medium bowl beat the egg white until merengue consistency and set aside.
In a separate bowl beat the heavy whipping cream and set aside.
In a separate large bowl beat the egg yolks with the sugar until obtain a smooth consistency.
Add butter, vanilla sugar and lemon extract.
Continue beating.
Add the quark or substitute (sour cream and Greek yogurt), lemon extract, lemon zest and vanilla pudding.
Beat for a few minutes until smooth.
Add the beaten egg and whipped cream folding with a spatula.
Pour the mix in the pan with the crust.
Bake for 75 minutes. When you use a substitute of yogurt and sour cream instead of quark the baking tan can be a little longer because the quark is heavier consistency.
Remove from the oven and let stand at room temperature.
Place in the refrigerator until ready to be served.
Remove from pan and cut into triangles
Enjoy a delicious German Cheesecake. It's much tastier than an American Cheesecake! I recommend to you to try it!!!

Receta Torta de Queso Alemana Ingredientes Para la base 150 grs de Harina para todo uso 1 cucharada de Polvo de Hornear 50 grs de Azucar 1 sobre de azúcar de vainilla (o 1 cucharada de extracto de vainilla) 1 Pizca de Sal 1 Huevo a temperatura ambiente batido 75 gr Mantequilla sin sal 1 cucharada de ralladura de cáscara de limón amarillo Para el molde Mantequilla Harina de maíz Para el relleno 5 yemas de huevo 5 claras de huevo 75 grs se mantequilla sin sal a temperatura ambiente 150 grs de azúcar 1 sobre de azúcar de vainilla (o 1 cucharada de extracto de vainilla) 3 gotas de extracto de limon amarillo 1 cucharadita de limon amarillo 125 grs de Nata para montar 1 pck de Pudin de Vainilla “ Pudding-Pulver Vainille- Geschman” 750 gr Magerquark (quark fat-free) (Queso Aleman) Sustituto para el Quark 500 grs de yogurt griego 250 grs de sour crema (crema agria) | Preparacion Base: Mezclar la harina, el polvo de hornear, la vainilla y la sal. Agregar la mantequilla u el huevo batido y la ralladura de limón amarillo Mezclar hasta formar masa homogénea. Envolver en papel plástico y refrigerar por media hora. Precalentar el horno a 350 oF (180 oC) Barnizar con mantequilla y enharinar con harina de maíz un molde redondo con base removible (desmontable). SI no tiene uno puede usar cualquier otro molde pero colóquele papel encerado en el fondo y a los lados. (En lugar de harina para cubri el molde use haruina de maiz, la harina de maiz es lo que le da la textura a la torta de queso Alemana) Sacar la masa del refrigerador y colocar en el centro del molde e ir presionando con los dedos para cubrir el fondo y los lados. Otra opción sería estirar la masa con un rodillo y colocarla en el molde pero la manera tradicional como lo hacen en Alemania es estirándola con los dedos en el mismo molde Hornear por 15 minutos a 350 oF (180 oC) Dejar reposar y preparar el relleno Relleno En un envase mediano batir la clara de merengue a punto de suspiro. Reservar En otro envase batir la nata para montar y reservar. En otro envase grande batir las yemas con el azúcar hasta que este uniforme. Agregar la mantequilla y la azúcar de vainilla. Seguir batiendo. Agregar el quark o el sustituto (Crema agria y yogurt griego), el extracto y ralladura de limon y el pudin de vainilla Batir por unos minutos hasta que este homogéneo. Incorporar con movimientos envolventes la clara batida y la nata batida. Vacía en el molde que tiene la base Hornear por 75 minutos. Cuando se agrega el sustituto de yogurt y crema agria toma un poco más de tiempo ya que el quark es más denso de consistencia. Retíralo del horno y dejarlo reposar a temperatura ambiente. Cuando esté completamente a temperatura ambiente meterlo en la nevera hasta el momento de ser servido. Sacar del molde y cortar en triángulos Y a disfrutar una deliciosa torta de queso Alemana. Es mucho más sabrosa que un Cheesecake Americano!!! Se las recomiendo |
